Recipe: Teriyaki Chicken Stir-Fry

Sautéed Chicken and Mixed Vegetables in Homemade Teriyaki Sauce

Teriyaki Chicken Stir-Fry: Stir-fried chicken and mixed vegetables in homemade teriyaki sauce.

 


Ingredients:

 

1 lb. (450 g) boneless, skinless chicken breasts, diced

2 cups mixed vegetables (bell peppers, broccoli, carrots, snap peas, etc.), chopped

3 tablespoons of soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon ginger, minced

2 tablespoons vegetable oil

Cooked Rice (for serving)

Instructions:

 

Prepare the sauce: In a small bowl, whisk together the soy sauce, oyster sauce, and sesame oil. Set aside.

 

Cook the chicken: Heat 1 tablespoon vegetable oil in a wok or large skillet over high heat. Add the chopped chicken and stir and fry until the chicken is no longer pink. It will take about 3-4 minutes. Remove the cooked chicken from the pan and keep aside.

 

Fry the aromatics: In the same pan, add one more tablespoon of vegetable oil if needed. Add the minced garlic and ginger, and fry until fragrant, about 30 seconds.

 

Cook the vegetables: Add the mixed vegetables. Stir-fry the vegetables for a few minutes until they begin to soften but still retain their crispness. Cooking time will depend on the type of vegetables you are using.

 

Combine everything: Return the cooked chicken to the skillet with the cooked vegetables. Give the sauce a quick stir to make sure the ingredients are well coated. Pour sauce over chicken and vegetables in skillet.

 

Stir-fry: Fry everything together for another 2-3 minutes, so that the sauce coats and heats the chicken and vegetables.

 

Serve: Serve the teriyaki chicken stir-fry over cooked rice. Garnish with additional chopped green onions, sesame seeds or additional teriyaki sauce if desired.

 

Suggestion:

 

Feel free to customize the vegetable mix based on your preferences and what's in season.

You can add other ingredients like chopped mushrooms, baby corn or water chestnuts for extra texture and flavor.

For a touch of sweetness, you can add a tablespoon of honey or brown sugar to the sauce.

If you prefer a thicker sauce, you can dissolve a teaspoon of cornstarch in a tablespoon of cold water and add it before pouring into the sauce. This will help thicken the sauce as it cooks.
