Savory Tortilla Sandwiches with Grilled Veggies and Melted Cheese

Ingredients:
4 large flour tortillas
1 cup shredded cheddar cheese
Assorted roasted vegetables (bell peppers, zucchini, onions,
etc.)
1 tablespoon olive oil
Test for salt and pepper
Instructions:
Brush one side of each tortilla with olive oil.
A tortilla with non-oily side, layer cheese and fried
vegetables.
Top with another tortilla, oily side up.
Grill in a skillet over medium heat until cheese melts and
tortillas are golden.
Cut into wedges and serve.
