Spaghetti Carbora: A classic Italian pasta dish with creamy egg and parmesan sauce

 


Ingredients:

 

8 oz. (225 g) spaghetti

2 large eggs

1 cup grated Parmesan cheese

4 oz. (115 g) pancetta or bacon, diced

2 cloves garlic, minced

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Instructions:

 

Cook the spaghetti: Fill a large pot with water and bring to a boil. Add plenty of salt to the boiling water. Add spaghetti and cook until al dente according to package directions. Drain the pasta and set aside.

 

Prepare the egg and cheese mixture: Whisk together the eggs and grated Parmesan cheese in a bowl. Keep the mixture aside. Make sure the eggs are at room temperature to prevent them from scrambling when added to the pasta.

 

Cook pancetta or bacon: Cook pancetta or bacon in a skillet over medium heat until crisp and golden brown. It will take about 4-5 minutes.

 

Add the garlic: Once the pancetta or bacon is cooked, add the minced garlic to the skillet. Cook for about 1 minute, until the garlic becomes fragrant. Be careful not to burn.

 

Combine ingredients: Remove skillet from heat. Add cooked spaghetti to pan, toss with pancetta and garlic to combine flavors.

 

Add the egg and cheese mixture: Pour the egg and cheese mixture over the pasta in the skillet. Quickly toss the pasta with the mixture to coat the spaghetti evenly. The heat from the pasta will help cook the eggs and create a creamy sauce.

 

Season and Garnish: Season the dish with salt and freshly ground black pepper to your taste. Mix well. Garnish spaghetti carbora with fresh chopped parsley.

 

Serve immediately: Spaghetti Carbora is best enjoyed immediately after cooking. Serve it in individual pasta bowls or plates and top each serving with an extra sprinkle of grated Parmesan cheese, if desired.

 

Suggestion:

 

Use high quality parmesan cheese for best flavor.

Be careful about adding salt, as pancetta or bacon and Parmesan cheese are already quite salty.

If you find the sauce too thick, you can add some pasta cooking water to the egg mixture. The starchy water will help create a smoother consistency.

Always toss the pasta quickly when adding the egg mixture to avoid the egg mixture.
