Grilled Quesadillas: Savory Tortilla Sandwiches with Grilled Veggies and Melted Cheese

 


Ingredients:

 

4 large flour tortillas

1 cup shredded cheddar cheese or Mexican cheese blend

1 cup cooked and seasoned chicken, shredded (optional)

1 cup mixed vegetables (bell peppers, onions, mushrooms, etc.), chopped

1 tablespoon olive oil

Test for salt and pepper

Optional toppings: sour cream, salsa, guacamole, chopped fresh cilantro

Instructions:

 

Prepare the vegetables: Heat the olive oil in a pan over medium heat. Add the chopped mixed vegetables and cook until they are soft and slightly caramelized. Season with salt and pepper. Keep the cooked vegetables aside.

 

Assemble the quesadillas: Place the tortillas on a clean surface. Top one half of each tortilla with shredded cheese, shredded cooked chicken (if using), and roasted vegetables. Fold the other half of the tortilla over the filling, forming a half-moon shape.

 

Cook the quesadillas: Preheat a non-stick skillet or griddle over medium heat. Place a quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese has melted. You can use a spatula to gently press down on the quesadilla as it cooks to help hold it together.

 

Repeat: Repeat process for remaining quesadillas.

 

Serve: When the quesadillas are cooked, remove them from the skillet and let cool for a minute before cutting into wedges. Serve grilled quesadillas with your favorite toppings like sour cream, salsa, guacamole and chopped fresh cilantro.

 

Suggestion:

 

You can use any combination of fillings you like. Besides chicken and mixed vegetables, other options include beef, shrimp, beans or different types of cheese.

If you prefer a crispier exterior, you can brush the outside of the tortillas with a little oil or butter before cooking.

You can cook quesadillas on an outdoor grill for a smoky flavor and grill marks.

To avoid making the quesadillas too thick, don't overstuff them with fillings.

Grilled quesadillas are a versatile and satisfying dish that can be enjoyed as a snack, appetizer, or even a light meal. The combination of melted cheese and grilled fillings makes them irresistibly delicious!
