Ingredients:

 

For the crust:

 

1 prepared pie crust (store bought or homemade)

For the filling:

 

2 large onions, thinly sliced

2 tablespoons of butter

1 teaspoon olive oil

1 cup grated Gruyere cheese

4 large eggs

1 cup heavy cream

1/4 teaspoon nutmeg

Test for salt and pepper

Instructions:

 

Prepare the crust: Preheat the oven to the temperature recommended for pie crust. If using frozen pie crust, follow package directions for thawing and pre-baking.

 

Caramelize the onions: In a large skillet, heat the butter and olive oil over medium-low heat. Add the thinly sliced onions and cook slowly, stirring occasionally, until they soften and caramelize. This process may take about 20-30 minutes. Set aside to cool slightly.

 

Prepare the filling: In a bowl, whisk the eggs, heavy cream, nutmeg, salt, and pepper together until well combined.

 

Assemble the Quiche: Place the pre-baked pie crust on a baking sheet to catch any spills. Spread the caramelized onions evenly over the bottom of the crust. Sprinkle the grated Gruyere cheese over the onions.

 

Pour the egg mixture: Slowly pour the egg and cream mixture over the onions and cheese, ensuring even distribution.

 

Bake: Carefully transfer the baking sheet with the quiche to the preheated oven. Bake for about 35-40 minutes, or until the quiche is set and the top is golden brown.

 

Serve chilled: Once baked, remove the quiche from the oven and let cool for a few minutes before slicing. Slice the quiche into wedges and serve warm or at room temperature.

Pie Crust: If using homemade crust, bake it blind (pre-bake without filling) before adding the onion and cheese mixture.
